Two images show the same glass of spiced coffee soda garnished with an orange slice and an orange glass straw.

Coffee soda sounds a little bonkers to some, I’m sure. But to those that know, to those that believe, it is the sweetest, bubbliest, most refreshing thing ever! A simple syrup made with brewed coffee gets steeped with warm spices and a bit of citrus. Once reduced, it’s mixed with soda water for an effervescent afternoon pick-me-up. It’s the perfect sip for any caffeine lover to add to their coffee recipe repertoire!

Think of it as the sibling to the espresso tonic. A perfect warm-weather coffee drink that’s light but flavorful and rich. Add a splash of cream if you’re feeling saucy, I won’t judge!

I’ve been obsessed with making the perfect spiced coffee soda for a few months, now. Ever since I first tried it. And now, after many batches and tests, I’ve done it! Made your new favorite iced coffee! You’re welcome.

    Ingredients You’ll Need

    Using Whole Spices

You’ll notice that I use whole spices in this recipe. That’s because they strain out so well in the syrup once it’s reduced. Using ground spices could lead to a grainy syrup.

If you only have ground, that’s fine, you can adjust. I use ground spices in my chai latte concentrate and it’s always a big hit, too.

Speaking of chai, the flavors of the spices coupled with the richness of coffee is so similar to a dirty chai latte, so if you like those, you’ll certainly love this coffee soda recipe!

Making Coffee Soda with Coffee Simple Syrup

This is just a brief overview, find detailed instructions in the recipe card below!

Add the coffee and whole spices to a pot.
Simmer until reduced by half. Add vanilla extract.
Cool and store until ready to use.
Pour coffee syrup into a glass filled with ice.
    Top with soda water.
    Stir to combine.
    Serve and enjoy!

Other ways to use coffee simple syrup

When I shared this syrup with some friends, they had a genius idea of using it in place of regular simple syrup in an old fashioned cocktail. And boy was it amazing!

You could also use it in place of vanilla simple syrup in an espresso martini for a spicier version that’s still just as delightfully sweet.

That’s if you are willing to forgo any coffee sodas. Which is doubtful!

    Ingredients

    For the Coffee Simple Syrup:

    • 4 cups brewed coffee, cooled to room temperature (leftover coffee works great)
    • 1 ½ cups brown sugar
    • 2 cinnamon sticks
    • 1 star anise
    • 6 cardamom pods, crushed
    • 10 whole allspice
    • 5 whole cloves
    • 1 tablespoon grated ginger
    • 1 orange, zested and juiced
    • ½ tsp. kosher salt
    • 1 tablespoon vanilla extract

    For the Coffee Soda:

    • 8 ounces soda water

    Instructions

    For the Coffee Simple Syrup:

    • In a large saucepan, combine all the ingredients except the vanilla extract (reserve that for later).

    • Simmer until reduced by half, about one and a half hours.
    • Remove from heat and stir in vanilla extract.
    • Strain syrup through a fine mesh sieve and discard the used spices.
    • Allow syrup to cool to room temperature before stored, covered, in refrigerator for up to one month.

    For the Coffee Soda:

    • In a large glass filled with ice add 1 ounce of the spiced coffee syrup and top with 8 ounces of soda water.
    • Stir to combine and enjoy immediately.
    • If desired, add a splash of cream to the drink before serving.
