Sweet Spiced Coffee Soda (Made with Coffee Simple Syrup)
A coffee syrup made with brown sugar, whole spices, and a bit of orange is combined with soda water in this bright and effervescent iced coffee recipe that’s the perfect balance of sweet and spice.

For the Coffee Simple Syrup: 4 cups brewed coffee, cooled to room temperature (leftover coffee works great) 1 ½ cups brown sugar 2 cinnamon sticks 1 star anise 6 cardamom pods, crushed 10 whole allspice 5 whole cloves 1 tablespoon grated ginger 1 orange, zested and juiced ½ tsp. kosher salt 1 tablespoon vanilla extract
For the Coffee Simple Syrup: In a large saucepan, combine all the ingredients except the vanilla extract (reserve that for later).
Set over medium heat and stir until sugar is dissolved. Bring mixture to a boil and reduce to a simmer.
Simmer until reduced by half, about one and a half hours.
Remove from heat and stir in vanilla extract.
Strain syrup through a fine mesh sieve and discard the used spices.
Allow syrup to cool to room temperature before stored, covered, in refrigerator for up to one month.
For the Coffee Soda: In a large glass filled with ice add 1 ounce of the spiced coffee syrup and top with 8 ounces of soda water.
Stir to combine and enjoy immediately.
If desired, add a splash of cream to the drink before serving.
