    Aperol Spritz Jello Shots (In Whole Oranges!)

    Aperol Spritz Jello Shots combine the bubbly, bitter orange flavor of the classic cocktail recipe with the bouncy fun of a jello shot! Made with Aperol, your favorite sparkling wine, and real orange juice they are perfect for a party. Pour into orange rinds and slice into wedges for a fun serving option!

    I’ve once again combined my love for a mixed drink with my love for a jello recipe! If you ask me, the three-ingredient drink was just begging to be turned into a jello shot.

    Maybe that’s because I’m always looking to add gelatin to my favorite cocktails (see: my lemon drop jello shots). When it only takes a few ingredients and a little time, who could blame me!?

    Here’s what you’ll need

    • Aperol – The Italian aperitivo scented with bitter orange.
    • Orange Juice – Either freshly squeezed or from a jug, I won’t judge you. If you go the freshly squeezed route you can use the orange rinds for serving cups!
    • Sugar – We’re making a simple syrup to slightly sweeten the shots.
    • Unflavored Gelatin – Yes, you can make plenty of jello shots with flavored gelatin, like my strawberry rosé jello shots, but I like using the plain kind for some drinks.
    • Sparkling Wine – Adds fun and fizz. I like to use a dry sparkling wine so the shots aren’t too sweet, but if you’d prefer sweet try a sparkling Asti Spumante.

    Making Aperol Spritz Jello Shots

    This is just a brief overview, find detailed instructions in the recipe card below!

    Cut the oranges and remove the flesh of the fruit.
    Juice the oranges and discard the pulp.
    Soften the gelatin in Aperol.
    Make a simple syrup with the fresh juice.
    Dissolve the gelatin with the hot simple syrup, then add sparkling wine.
    Pour jello into orange rinds and refrigerate until set.

    Using Whole Oranges

    The most important thing for using the citrus rinds to hold the gelatin is to make sure you get out all the flesh of the fruit without puncturing the rind.

    Use a very sharp knife to cut around the edge and then pry out the flesh segments with your fingers. I explain this in greater detail in the video below!

    Of course, you can always just pour the jello mixture into a prepared pan and slice to serve. That's how I like to make my champagne jello shots and they're always a hit!

    Aperol Spritz Jello Shots (using whole oranges)

    Aperol Spritz Jello Shots combine the bubbly and bitter orange flavor of the classic cocktail recipe (LINK) with the bouncy fun of a jello shot!     Equipment

    • Sharp Knife
    • Fine Mesh Sieve
    • Measuring Cup
    • Small Saucepan
    • Muffin Pan

    Ingredients

    • ½ cup Aperol
    • 2 packages unflavored gelatin
    • ½ cup freshly squeezed orange juice, from about 3 oranges
    • ¼ cup granulated sugar
    • 1 cup sparkling wine, such as Prosecco

    Instructions

    • Cut the oranges in half lengthwise (I like to say from “button to button”) and run a sharp paring knife around the edge of the fruit’s flesh and pith, separating them. Remove the segments of the orange by pushing thumbs into the space created by cutting the fruit and kind of “peeling” the fruit away from the rind. (See detailed example in the video!)
    • When all the fruit has been removed from the oranges, press it through a fine mesh sieve set over a measuring cup to juice. You’ll want ½ cup of juice when all is said and done. Discard the pulp.
    • Set the empty orange rind “cups” in the sections of a muffin pan, making sure they are stable and won’t tip. Set aside.
    • Pour ½ cup Aperol into a large measuring cup (4 cups or more) and sprinkle 2 packages of unflavored gelatin over the top. Set aside for 5 minutes to allow gelatin to “bloom.”
    • While the gelatin blooms, combine the ½ cup orange juice and ¼ cup sugar in a small saucepan. Set over medium-high heat and cook until sugar has dissolved to create a simple syrup.
    • Pour the hot simple syrup over the bloomed gelatin and stir until gelatin is dissolved, about two or three minutes.
    • Allow the mixture to cool slightly, for about five minutes or so.
    • Once the gelatin mixture has cooled slightly, slowly pour the sparkling wine into the mixture. Pouring too fast or when the mixture is too hot will create a lot of foam from the bubbles in the wine.
    • Pour the jello mixture through a fine mesh sieve and into the orange rinds (it may not all fit! Pour excess into a lightly greased baking pan or jello shot cups).
    • Refrigerate the Aperol spritz shots for at least 4 hours, or overnight. To serve, slice the oranges into wedges.
    • Enjoy responsibly.
    • If making the jello shots in a pan, cut the shots into small squares to serve and enjoy!
