Instructions
Cut the apples in half lengthwise. Using a melon baller or sharp spoon, carefully remove the inside of the fruit, leaving only a small amount attached to the skin of the apple. This will create a cup for the jello shots!
If desired, brush each apple half with lemon juice to prevent browning. (This isn’t totally necessary, but it makes for wonderful presentation.)
Settle the apple halves into a muffin tin, ensuring they are even and won’t tip. Set aside.
Pour ⅓ cup cinnamon whiskey and ⅓ cup orange liqueur into a large measuring cup (if desired, for a stronger shot, use ½ cup of each alcohol) and sprinkle 2 packages of unflavored gelatin over the top. Set aside for 5 minutes to allow gelatin to “bloom.”
While the gelatin blooms, warm the mulled apple cider in a microwave safe cup or on the stove. (If using ½ cup of each alcohol, you will only need 1 cup of apple cider)
Pour the hot apple cider over the bloomed gelatin and stir until gelatin is dissolved, about two or three minutes.
Pour the jello mixture through a fine mesh sieve and into the apple cups (This amount is usually perfect for 3 medium-sized apples, but you may have extra depending on the size of your fruit. Pour excess into a lightly greased baking pan or jello shot cups).
Refrigerate the apple cider jello shots for at least 4 hours, or overnight. To serve, slice the apples into wedges.
