Using a very sharp chef’s knife, carefully cut the acorn squash in half. Scoop out the seeds with a spoon and discard. Lay the squash cut side down on the cutting board and slice into ½ inch crescents. Place acorn squash slices in a large bowl.
When all the squash is cut and in the bowl, drizzle in 3 tablespoons olive oil, a generous pinch of kosher salt plus 2 tablespoons brown sugar, and ½ tsp. cinnamon, if using. Toss to coat.
Place squash in a single layer in the basket of an air fryer and air fry at 400 degrees for 10 minutes, giving the basket a quick shake halfway through cooking.
Serve sliced squash with a sprinkle of flaky salt and fresh thyme leaves, if desired.

Depending on the size of your air fryer, you may need to cook the squash in two batches.
