INGREDIENTS

You'll need rhubarb, sugar, lemon juice, flour, oats, brown sugar, butter, salt, cream cheese, half & half, egg, and vanilla.

Make the rhubarb compote by heating rhubarb, sugar, and lemon juice over medium heat until thickened.

Make the oat crust by combining a few dry ingredients and holding them together with butter. Bake until golden brown.

Make the cheesecake filling by whisking all ingredients together.

Pour the cheesecake filling onto baked crust and add dollops of rhubarb compote. Swirl compote.

Chill until set then cut & serve!
