I didn’t know how much I’d love these Homemade Reuben Egg Rolls.
And boy am I glad! It was the most pleasant surprise on a day when I really needed it. On a day when we all need it, I’m guessing. Happy St. Patrick’s Day from my self-quarantined self!
I’ve had the idea for these babies bouncing around in my brain since I first heard Andrea mention them on Sidework Podcast. She mentioned it in an exasperated, “over-it” kind of way that was really hilarious and a part of a bit, but it got me thinking.
FILLED TO THE BRIM WITH SPINACH, GARLIC, AND THREE (!!!) TYPES OF CHEESE THESE SPINACH STUFFED SHELLS ARE A DELICIOUS MAKE-AHEAD VEGETARIAN DINNER THAT WILL PLEASE EVEN THE BIGGEST OF CARNIVORES!
Spinach Stuffed Shells are the answer to all your Lenten
It’s beyond crazy that in just a week we’ll be celebrating Fat Tuesday, eating our weight in Paczki, and then quickly transitioning over into the season of Lent.
Now, I’m what you would call a lapsed Catholic. I often refer to myself as retired. But! A lot of the traditions from my upbringing have stuck around these parts, even if many others have fallen by the wayside. I still recite Hail Marys when I’m stressed, keep a bible and a rosary in my car, and aim to limit my meat intake on Fridays during Lent.
We’re turning the quintessential Valentine’s Day candy into a must-make dessert with this Giant Conversation Heart Cookie Cake. Enjoy!
A giant conversation heart cookie cake?! That doesn’t taste
like off-brand, expired chalk with a hint of cherry cold medicine?! That’s
actually made of cookie dough and filled with festive candy?!
Yes, that’s what we’re doing today.
Although, you don’t need to do it all today. Or even in one
day. I didn’t. I made the cookies and frosting one day, decorated it the next,
delivered it to my mom the day after.
But, I highly, highly recommend doing it for
Valentine’s Day. For someone you love. Maybe for your mom? Because if she’s even
half as obsessed with cookie cakes as Melba is, she’ll go bonkers for this!

Some may argue that it’s too soon to start Valentine’s Day
Some may argue that it’s just a holiday invented by the
greeting card companies to sell more product.
And to those people I say….shut your mouth! But not before
you put a chocolate covered strawberry in it!
