Spinach Stuffed Shells are the answer to all your Lenten dinner needs!
It’s beyond crazy that in just a week we’ll be celebrating Fat Tuesday, eating our weight in Paczki, and then quickly transitioning over into the season of Lent.
Now, I’m what you would call a lapsed Catholic. I often refer to myself as retired. But! A lot of the traditions from my upbringing have stuck around these parts, even if many others have fallen by the wayside. I still recite Hail Marys when I’m stressed, keep a bible and a rosary in my car, and aim to limit my meat intake on Fridays during Lent.
That last one doesn’t always work. I am married to a man who I’m pretty sure is 56% venison. But, the concept of no meat on Fridays is inescapable in the Midwest. Every bar has a fish fry and every good Wisconsinite goes.
A Vegetarian Dinner
Sometimes I don’t want fried fish, though. Don’t get me wrong, I love me a piece of crispy cod. With a side of tangy coleslaw and a piece of buttered rye bread. My mouth is watering just typing those words out, but! Woman cannot survive on fried food alone. (Lord knows I’d be willing to try.)
Enter – the ultimate vegetarian dinner. That’s also full of cheese! Because I am who I am. And I still want to make my Midwestern heart (and husband) happy. Yes, you could totally add sausage or chicken to these stuffed shells, but they’re so good on their own that I don’t think it’s even remotely necessary. But I’m not gonna tell you how to live your life.
