Roasted Garlic Orzo

Guess I’m getting into a bit of a rut?

I’m all about carbs.

I’m all about side dishes.

Now, we’ve got carbs as a side dish.

This is one of my faaaaavorite things to make when I’m in need of comfort. And carbs. And cheese.

It can be a side dish with roasted chicken or on its own in a big ol’ bowl. Glass of wine (not entirely) optional.

Roasted Garlic Orzo with Parmesan

8oz. orzo, uncooked

1 head roasted garlic 

4 TBSP unsalted butter

¼ – ½ cup freshly shredded parmesan

Salt, to taste

Cook pasta according to package instructions (with a heavy dose of salt in the water, as always) and drain (do not rinse – we want the starch to stay on those little bits o’ pasta).

While the pasta is cooking, melt the butter in a large glass bowl. Press the roasted garlic out of the skin and into the butter, mixing with a fork to create a thick paste.

Pour drained pasta on top of mixture and stir to coat. Add cheese and stir to melt.

Serve immediately.
