Charred Broccoli with Lemon

Maybe I’m supposed to?

But, to my knowledge, I’ve always loved veggies.

Some, more than others, to be sure.

Carrots. Especially in a cake.

Brussels sprouts. Especially with bacon.

Broccoli. Especially with lemon.

Yes, yes, I know it sounds bonkers, but trust me! It’s my own take on a side dish from Bavette’s (oh, be still my heart I love you so!) and easy as pie to make. Crunchy texture from charred bits and a bright pop of citrus heighten regular broccoli to make this effortless side dish a real show stopper!

Charred Broccoli with Lemon

1 pound broccoli, ends trimmed and cut into manageable pieces

1 lemon, zested and cut in half

Sea salt, to taste

Preheat the oven broiler to the highest setting.

Place a (well seasoned) cast iron skillet over medium-high heat and add 2 tablespoons canola oil, heating until the oil begins to shimmer.

Place the broccoli in the pan and cook, stirring occasionally, until it begins to tenderize. Add lemons, cut side up, into pan and place under broiler for 5 – 10 additional minutes, until broccoli is charred and crisp.

Sprinkle with lemon zest and sea salt and serve warm.
