Sesame Garlic Green Beans (& talking)

Report cards used to say things like, “Amanda is an excellent student but she tends to be a social butterfly.” Took me a long time to realize that it wasn’t the praise I originally thought.

Luckily, this talent/gift/personality flaw comes in handy from time to time. Like this last weekend when my bff Alex came into town.

It had been two years since we had seen each other – and despite all the phone calls and text messages and snapchats – there’s nothing like a face-to-face meeting to really hash out life’s details. And show him my house. And introduce him to Seth. And let him play with Edgar.

We talked for eight hours straight – stopping only for the occasional wine refill or Edgar interruption. There was also the briefest of pauses while we ate dinner. Mouths full of stir-friend string beans we made faces and exchanged looks practiced over nearly a decade of friendship. That’s one of my favorite things about Alex – we don’t need words to communicate, but they sure to do help.

Sesame Garlic Green Beans

1 pound green beans, cleaned and trimmed

2 tsp. sesame oil

3 cloves garlic, minced

Salt and pepper, to taste

Heat a large cast iron pan over medium heat and drizzle with your favorite cooking oil, heat until the oil begins to shimmer.

Toss in green beans and stir to coat, cooking until tender, about 5 – 7 minutes. Drizzle in sesame oil and add garlic, stirring until fragrant. Remove from heat and season with salt and pepper.

Serve with a side of white rice, if desired.
